Bibim-guksu (비빔국수)
INGREDIENTS:
5 Ounces Somyeon (Thin Wheat Noodles)
4 Ounces Kimchi
3-4 Tablespoons Kimchi Juice
2 Heaping Tablespoons Gochujang
1 Teaspoon Sugar
1 Garlic Clove, Minced
1 Tablespoon Toasted Sesame Oil
Toppings
1 Cucumber, Julienned
Grounded, Toasted Sesame Seeds,
1 Half-Boiled Egg
4 Ounces Kimchi
3-4 Tablespoons Kimchi Juice
2 Heaping Tablespoons Gochujang
1 Teaspoon Sugar
1 Garlic Clove, Minced
1 Tablespoon Toasted Sesame Oil

1 Cucumber, Julienned
Grounded, Toasted Sesame Seeds,
1 Half-Boiled Egg
DIRECTIONS:
- Mix together the kimchi, water, gochujang, sugar, garlic, and sesame oil in a large bowl.
- Bring a pot of water to a boil and add the noodles. Stir them with a wooden spoon and cover. Cook for 3 minutes or until the noodles are chewy.
- Drain the noodles in a strainer and rinse them in cold running water. Drain and add to the kimchi mixture.
- Mix everything well and transfer to a serving bowl. Top the noodles with the cucumbers and egg and sprinkle some sesame seeds. Enjoy!
